News: Secret recipe of soy sauce
Try to describe the flavor of soy sauce to someone that’s never tried it: salty, bitter, sweet, umami… it’s difficult to explain using our limited vocabulary.
Luckily, chemistry doesn’t rely on words. For the first time, researchers from the Technical University of Munich (TUM) unlocked the secret flavor molecules that make soy sauce so special. In fact, they’ve recreated the magic condiment using the compounds they identified, and even trained taste testers couldn’t tell the difference!
